Pumpkin Whoopie Cookies

I was browsing some other cooking blogs, and found this recipe. The pictures looked so good! I bookmarked it with the intention of making it later in the fall. Well, that later was last week. They didn’t just look good, they tasted very good. Here are mine:

Cookie of the Day: NYT Chocolate Chip

I’ve seen the New York Times Chocolate Chip recipe on several other blogs, and the general consensus was that they are quite a good cookie. So I gave them a try. Here’s a PDF of the recipe: LINK

Brown Sugar Cookies

With a close family member in the hospital, and school in full swing, there’s just no time to write this up right now, but I made “Brown Sugar Cookies” today. Recipe: Link

They taste pretty good, sort of a new flavor for cookies. They have sort of a caramel flavor, and they’re rich in sugar and vanilla flavors. As you can see from the pictures, they baked beautifully.

Good luck if you try these!

Cookie of the Day: No-bake Cookies

I’ve been making No-Bake Cookies since I was a kid. I think this was the first recipe that I learned how to make. By the 3rd or 4th grade, I had it memorized. I still have it mostly memorized but I refer to the recipe to make sure that I get it right.

For some reason, nobody can seem to make them the same as me. My mom has tried and failed (and she even taught me how to cook them!), and my wife has tried and failed as well! So, I will TRY to impart my wisdom so that you can make yourself a treat.

There seem to be a lot of variation on No-Bake Cookies: some people add coconut, peanut butter, and whatever else — but I just like mine plain. Its a simple recipe, using only six ingredients, and its from an old Riverton, Utah ward cookbook.

Cookie of the Day: Choc-Oat-Chip

One of my favorite variations on chocolate chip cookies is adding oats. My other favorite is butterscotch chips, but that was already covered here (link). The oats add chewiness, texture, and some additional flavor to enhance the cookie. This recipe came from Nestle, on the back of a bag of chocolate chips (link).

Yeah, I went a little overboard with the pictures. So sue me! :)

Chocolate Mint Sandwich Cookies

My brother- and sister-in-law recently had their baby, so I was looking for a treat to make them when I found this recipe. It’s from 101 Cookbooks, and over there it’s called Minty Chocolate Christmas Cookies. But why only have them for Christmas?

The frosting is pink because the baby is a girl!
