Cookie of the Day: No-bake Cookies

I’ve been making No-Bake Cookies since I was a kid. I think this was the first recipe that I learned how to make. By the 3rd or 4th grade, I had it memorized. I still have it mostly memorized but I refer to the recipe to make sure that I get it right.

For some reason, nobody can seem to make them the same as me. My mom has tried and failed (and she even taught me how to cook them!), and my wife has tried and failed as well! So, I will TRY to impart my wisdom so that you can make yourself a treat.

There seem to be a lot of variation on No-Bake Cookies: some people add coconut, peanut butter, and whatever else — but I just like mine plain. Its a simple recipe, using only six ingredients, and its from an old Riverton, Utah ward cookbook.

No-Bake Cookies

Ingredients

3 C. Oatmeal
2 C. Sugar
1 Sq. Butter or margarine
1/2 C. Milk
1 Tbsp. Cocoa
1 Tsp. Vanilla (add after boiling)

Directions

Mix all ingredients, except oatmeal, and cook on stove until all the butter is melted and sugar dissolved. Bring to a boil and add 1 tsp. Vanilla. Remove from heat and add oatmeal. Drop by teaspoons onto waxed paper.

My Personal Directions

  1. In a medium sauce pan, melt the butter over medium heat.
  2. Add the milk before the butter gets too hot
  3. Add sugar and cocoa (you can sift the cocoa to avoid clumps), and stir. Continue to stir, cooking over medium heat until the mixture boils.
  4. Let it boil for a few minutes, and watch the color. When it starts becoming more caramel colored, it’s done. Remove from heat.
  5. Add the vanilla, stir well.
  6. Add the oats, stir well to coat.
  7. Spoon onto cookie sheet. Eat warm with a spoon, or wait for them to cool and set.
